A Very Hungry Caterpillar Birthday

It's been two weeks since James' 2nd birthday party and I want to make good on my Facebook promise to post more pictures on my blog.  I love planning and giving parties especially ones to celebrate my kids' birthdays.  I do a lot of planning for them, so I thought I would do a separate post to share the details of this one.

One of James' favorite books is Eric Carle's The Very Hungry Caterpillar.  We've read it every night for months.  He likes to say a enthusiastic "pop" at the beginning of the book, and of course loves to repeat, "and he was still hungry."  Charlton and I have snickered to each other quite a few times that we think he likes that book so much because he loves food.  The "and he was still hungry" could easily apply to him.  He's not a big kid but he eats a lot!  We don't know where he puts it, but he eats almost as much as Steven (and Steven's been eating a lot lately too).  So, when I saw a few of these party decorating ideas, it was a done deal.

I came up with and made this invitation after seeing an idea on the Pottery Barn Kids website (who knew they had a party planning link?)  I used green card stock, glued on pom poms from Hobby Lobby, and let my more artistic husband draw the antennae and feet.  He used a yellow highlighter to give the leaf a little dimension.  Easy!

Also, got this idea from the PBK website.  I bought the green Chinese lanterns online and made the face out of felt, paper, and purple pipe cleaner.  The tablecloths are just green plastic ones you can get anywhere. All the polka dot supplies are from Party City.  I found wrapping paper at HL and laid it across the tablecloth as a runner (thanks for the idea Pinterest!).
The table cards were the only thing I didn't make- I cheated and bought a PDF file on Esty ($4).  Totally worth a few dollars to avoid all the frustration of a perfectionist trying to do it herself.  I printed them on card stock, glued them to a skewer, and glued a round piece of green card stock on the back to hide the skewer.  I tried to have as many of the food items from the book as possible- the only ones left out were cherry pie and ice cream (the kids and I are dairy free because of allergies).

My mother-in-law made her yummy Texas chocolate sheet cake, and my mom made some GF, DF brownies for the kids and I to indulge in.  I bought the hat pre-made at Hobby Lobby and hot glued a felt 2 and his name to personalize.

We grilled hot dogs for the party- I counted that as the sausages mentioned in the book.  The lollipops were the kids party favors to take home.

This is another idea from Pinterest- made out of card stock and stung together with red and white gingham ribbon.

James is not into organized games and activities but I did want something for the older kids to do.  James did enjoy doing crafts with his age group at VBS so I thought a craft would be a good idea.  I spray painted egg cartons ahead of time so that they could decorate them at the party.  I also had coloring pages I copied from an Eric Carle coloring book my mom found at Kroger.

Pinterest idea: cut a big piece of red card board (it was green on back) and used a sharpie to make an apple

GF and Vegan (recipe from Babycakes NY cookbook) caterpillar cupcakes.  I used a very small cake pan for the face- found at Hobby Lobby.

My husband always decorates the kids' cakes because he's so good at it.  I seriously think that if being a lawyer doesn't work out that he could make it as a cake decorator.  =)  He used yellow Laffy Taffy and green hard candy for the eyes, and broke a skittle for the nose.

It was a super fun party to plan.

James at 20 months

James will be 20 months old tomorrow.  It’s been a while since I have done an update.  He is growing so fast-- too fast to keep up with which eases us right into a discussion of what he like right now.  James is a hoot…as in really crazy!  He keeps me on my toes.  One nickname I use most often for him is Crazy Baby; Jamesy and Angel are the only other ones that have stuck for me though a lot of our family and friends still call him Baby James.  He is just such a cute, sweet kid- not that I’m biased.  Nicknames seem appropriate.  Life is never dull with him.  He is a momma’s boy and sweet as can be except when he’s not- that’s part of his charm.

James’ biggest news is that he is talking.   He has moved on from ma ma, da da, uh oh, and bye bye.  After months of trying to get him to repeat after me, he woke up one morning and decided he wanted to talk.  There’s still a lot of babbling but he really looks into my eyes and chatters away and I know he’s trying to tell me something now.  Unfortunately, he really thinks he’s communicating and is more than a little frustrated when I don’t understand exactly-what-he-wants.  Nonetheless, I am ecstatic at this new development and James is very proud of himself.  He also says: amen, Steven, Elmo, all done, Mammaw, Tigger, shoes, hi, hello, upstairs/downstairs, dirty, banana, doggie, please, cheese, hot, chip, thank you, sheep, night-night, Lightning (as in McQueen), and dirty.

Stats at 18 months:
Height: 32 inches (40%)
Weight: 23 pounds (10%)
Head: 19 inches (60%)

He continues to love music, and sings along with CDs in the car.  Adele’s Rumor Has It is the one you will catch him singing to himself around the house most often.  He can sing the whole Elmo’s World theme song- not the words of course- it’s pretty much la las the whole time but it’s the correct tune. He loves Elmo which I find funny since he doesn’t watch it that often, but we have a few singing Elmo toys that were Steven’s and that’s how he learned the theme song.  He is not interested in TV unless I am sitting in there with him.  It comes in handy when he or I are sick but not so handy when I need to be cooking dinner.

He loves his blankie, stuffed animals, playing outside, shoes, food, balls especially basketballs, Lightning McQueen toys, and baths with his big brother.  His favorite books are Peek-a-boo books, Pat the Bunny, Mr. Brown Can Moo, and The Hungry Little Caterpillar.  He repeats “still hungry” when we pause on each page of the book.  He’s kind of like that caterpillar- always hungry.  He likes any book or song with animals in it especially Old MacDonald’s Farm, Itsy Bitsy Spider, and How Much Is That Doggie In the Window.  He loves dogs!!  He is in an I-don’t-like-vegetables stage.  He hates having his fingernails clipped and diaper changed.  He has really good balance and incredible fine motor skills.  He can get anything open (not so good in my mind).  He tolerates his glasses well but they are the first things to suffer when he gets mad.  He rips them off his head and chucks them on the ground to really let you know how mad he is…about twenty times a day (I’m not exaggerating here).  But, he gets a lot of attention in those glasses.  If I had a dollar for every time someone comments on them, we would already have saved enough for college.  I don’t mind it when it’s positive attention and he is enjoying it, but it does make me a little weary when someone is just asking me 20 questions as if he’s an interesting science experiment.  Or when he’s throwing a fit in the checkout line.  FYI, don’t ask me about his glasses when he’s throwing a fit, I’m a little distracted.

I am forcing him to learn how to come down the stairs by himself.  Holding his hand wasn’t doing it.  He would just giggle as he tripped and dangled his way down the stairs holding my hand.  I walk a few stairs in front of him now.  At first, he screamed in protest and reached for me but now gives in (without screaming) and scoots his bottom down the stairs.  He’s gotten good at it in a short time, which makes me realize how much I was babying him.  He is much more cautious at this age than Steven was which balances out the crazy a little better.  He still attempts death defying acts but thankfully some of them only happen once.  He learns from his mistakes.  Sometimes.

He is a smart boy; he picks up on everything.  Every night at dinner, Steven says the blessing for us.   He says “Dear Lord, thank you for our food and for…” and there’s a long pause as he looks at Charlton and I to determine who cooked dinner.  I have to say that on the more challenging days this really irks me because Charlton NEVER cooks dinner, and Steven sees me cooking in the kitchen every night.  It’s so obvious…even to James… because this week when Steven paused to look around, James yells “momma!”  That’s what I’m talking about.  The boy knows to recognize momma’s hard work- I’m the one that feeds him.  He’s still my sweet baby James even if two is right around the corner.

Presidental Wax Museum

Steven has been learning about America and its Presidents at school, and was given a special project to choose a President and give a short speech in character.   The Wednesday before President's day, his Kindergarten class put on a Presidental Wax Museum for the parents and each child did their presentation.

We chose Teddy Roosevelt. I admit it was in part because Charlton and I thought it would be a fun and easy costume to pull together.  Gotta be practical, people. And any excuse to see Steven in a tie and three piece suit is good enough for me-- he looked so adorable and then he put that mustache on.  Just forget about it.  Steven was excited about being Teddy because he liked to play sports and was the first President to ride in a airplane, car, and submarine.  Pretty cool.

These are pictures from the presentation.  I recorded his speech on our video camera so I will have that up as soon as I figure out how to do that.  He doesn't like talking in front of people but he remembered his whole speech and did so well.  We were very proud of him; there were probably 30 people in the audience.

The boys (Teddy, George, and Woodrow Wilson)

We were thrilled that Mammaw was able to come see him as Teddy.  She is one of Steven's biggest fans and comes to all his games and school events!
Steven with his special friend, Susanna (Abigail Adams).  She is also a friend from church, so we are blessed to see her almost every day of the week this year.
With their teacher, Mrs. Green, who is also originally a friend from church.

Fish and Chips My Way

Charlton and I are addicted to the BBC's Downton Abbey.  To celebrate Season 2's premiere on PBS a few weeks ago I decided to make a healthy (gluten-free, dairy-free) version of fish and chips for dinner that night.  I used Elena Amsterdam's recipe for Fish Sticks which all four of us LOVE!  If your family doesn't eat fish, this is a great way to get them to eat it.  The almond flour breading is so yummy!  For the "chips" I used Alexia brand frozen sweet potato french fries.  I can't tell you how much I love these.  The boys think they're eating french fries.  I know they're eating vegetables.  It's a win-win situation.  And since they don't count the fries as a vegetable I threw some roasted broccoli in as a side.  So healthy, so delicious!  I'm telling you that you have to make this- your family will call you an English hero...or at least ask for more.

Cooking notes:
Elena doesn't recommend using Bob's Red Mill Almond meal/flour for her recipes because it is coarser than regular almond flour.  But it is the easiest to find (Kroger and HEB both carry it though it is MUCH cheaper online!!) so that's what I used.  I do only use half of the amount of flour at a time though because it does tend to get wet and clumpy half way through the breading process.  I also use coconut oil instead of olive oil and grape seed oil.  I have used cod the last few times and it cooks perfectly.

Fish Sticks

1 pound white fish (such as cod, snapper or tilapia)
2 eggs, whisked
1 cup blanched almond flour
1 teaspoon celtic sea salt
¼ cup olive oil
¼ cup grapeseed oil
  1. Rinse fish fillets in cold water and set on a plate
  2. Cut fish into 1 inch by 5 inch pieces, following the lines of the fillets and removing any bones
  3. Place eggs in one dish and flour and salt in another
  4. Dip fish sticks in egg, then flour; reserve to a plate
  5. Put 2 tablespoons grapeseed oil and 2 tablespoons olive oil in a large skillet and heat oil on medium high
  6. Place half the the fish sticks in the pan, leaving enough room around them so that they aren't crowded
  7. Cook for a few minutes on each side, until well browned, then remove fish sticks to a plate lined with a paper towel
  8. Add oil --2 tablespoons grapeseed and 2 tablespoons olive to pan and fry remaining batch of fish sticks
  9. Serve with ketchup

Day-After-Christmas Christmas

As I mentioned in the last post, we decided to have Christmas with Mimi and Popo (& Co.) on Monday so we could have the whole day together.  The newest addition to the cousin clan is baby Josh who was born on December 14.  Since he had to spend several days in the NICU, this was the first time we actually got to hold him.  8 cousins total- all ages five and under- makes for a lively time.  It was a blast!

All 8 cousins with Mimi and Popo

Mimi and Popo bought the kids motorcycle jackets and hats while they were on vacation at the end of the summer.  So of course we tried to get a picture of them all together in their jackets...and the hats.  James was the least cooperative.  In fact, I think we cured him of ever wanted a leather jacket or a motorcycle which makes me very happy.

James gave Santa a big smile and walked right up to him at first, but he was NOT going to sit on his lap.
Earlier in the week, I had pointed out a man dressed as Santa, and Steven who was very put out with me said, "Mommy, Santa is not real."  He did, however, enjoy Santa Popo quite a bit for someone who doesn't believe in Santa.  Uh huh.  I told him it's fun to pretend.

Steven and Saige (the oldest cousins) play with someone else's present.
James and Nick (10 days apart) playing paddy cake with Mimi.  I think it's hilarious that Nick put the Mr Potato Head glasses on himself and left them on for a long time.  James had to be the inspiration there.  Can you tell that James loves music?  Unfortunately, the only time he doesn't care about it is when we are taking pictures.  I snuck these in.

Giving Josh some welcome-to-the-family love.  We are so thankful he is happy and healthy!
